Fall - best season of the year (in my humble opinion). And best flavor? Pumpkin ! I love pumpkin spice lattes, pumpkin cheesecakes...all so smooth, creamy and perfectly spiced. But I also love smoothies. So why not make a pumpkin spice one?
There are a few variations you can go with in this recipe. If you have some sugar-free vanilla syrup handy then don't add the extract and sweetener but instead add enough syrup to taste. If you want, throw in a tablespoon of full-fat cream cheese. Like added protein? Then a scoop of vanilla whey works great in this recipe too. Want to make it even grander? Top it with a spiral of whipped cream and a sprinkling of cinnamon. Have fun with it but above all else, ENJOY IT!
RECIPE:
WHAT YOU NEED
1/4 cup canned pumpkin (not pie filling)
1/4 cup heavy cream
3/4 cup water
1 tsp pure vanilla extract and 2 packs of sweetener of choice ( sticking with only those that have zero carb impact)
1/2 tsp pumpkin pie spice
1/2 cup ice
MAKE IT
Blend all ingredients thoroughly in your blender - you will need a blender that can crush ice

ReplyDeletethis will up the carbs (adding milk) but if that is your preference then yes it should work fine. you would probably want to replace the cream and water combined though to ensure a rich enough tasting drink

ReplyDeleteOh, wow. I just made this. Made the recipe as written but with coconut milk instead of water (to add flavor and since I had it) and and it is to.die.for. I used stevia glycerite to sweeten it and there was no artificial sweetener taste whatsoever (and I'm super sensitive to that).

ReplyDeleteThis looks delish--found a link on Pinterest. I'm going to try it with Silk unsweetened almond milk. Found it at a Walmart Supercenter, only 1 g carbs per cup! Tastes pretty gross by itself, but makes good smoothies in the bullet blender with ice and Monin Ofree syrups.

ReplyDeleteHi Carol, I don't calculate carb counts so you would have to do this manually by reading labels for each ingredient and then determining carb count for amts used
DeleteHi! I made this recipe with a scoop of vanilla Whey protein powder and substituted the heavy cream for 1% milk, didn't add any sweetener and added 1/2tsp of cinnamon. This makes the recipe fit into my clean eating lifestyle. It tasted great! Thanks
